After racking and racking, the wine is kept on the fine lees (sur lies), at a temperature of 20-22 ° C, for a period of at least two months and here it also completes the malolactic fermentation. Subsequently, taking advantage of the winter cold, it is left for 3-4 months at low temperatures to favor the deposition of the turbidity and the clarification.

The aging period lasts about 10 months, and finally, one year after the harvest, the Langhe Nebbiolo d.oc. "3" is bottled and after a few months of rest in our cellar it is ready for sale.
